Your guide will be a professional chef, Jaume Brichs, also the instructor for your very special cooking class. Jaume has trained in France, England, Germany and Catalonia, and currently combines his work as pastry chef in a well-known location in Barcelona, with food consulting for prestigious hotels all over Spain.

He will help you prepare a full lunch – everything from the hors d’oeuvres to dessert – based on some of the most famous recipes of regional Catalan cuisine. Private Avant Garde Cooking Classes in Barcelona

Some of the most revolutionary chefs in Spain are based in Catalonia. This area in North-Eastern Spain is one of the most influential culinary regions, especially for modern Spanish cuisine. If you’re visiting Barcelona, you’ll soon learn it is a city in the vanguard of Spanish art, architecture, interior design, fashion and other artistic expressions; gastronomy is no exception. We propose some time off from conventional tourism, to teach you the secrets of Catalonia’s culinary masters.

Your instructor is Monica, a professional cook who has successfully worked as head chef for a number of well-known restaurants and hotels. The idea is to combine regional and exotic ingredients with the most innovative cooking techniques and personal creativity. The preparation will produce as much pleasure as the eating itself: exciting flavors, textures, and colors combine to make you enjoy every minute, from preparation to the last bite of dessert!

Featured chefs include the internationally acclaimed Ferrán Adriá, considered by many as the most revolutionary chef in the world; his cooking is based on the combination of texture, temperature, and taste – with a touch of humor. In the words of superstar French chef Paul Bocuse: “He’s doing the most exciting things in our profession today”.

Also featured is Carmen Ruscalleda, chef of the 3 Michelin-starred Sant Pau restaurant, and its sister restaurant in Tokyo. Based on her creative interpretation of the Catalan culinary tradition – always combing sweet and savory, fish and meat, hot and cold, vegetables and fruits – Carmen has developed recipes that are both complex and balanced. Your teacher, Gabriela Llamas, is a prestigious cooking professional with 15 years’ experience. She was born in Madrid and is member of the Spanish Academy of Gastronomy, but she has worked for the Culinary Institute of America and many other culinary organizations, both in Spain and abroad.

Your class is individual, and specially designed, just for you. The venue is a small, private professional kitchen, perfectly equipped, and very well located, right in the center of the old Madrid, close to the Palacio Real and the Plaza de la Opera… A delightful spot to go for a walk after lunch, in case you feel like it.

Very close to Pedro Subijana’s Akelarre restaurant is the venue for your class, a charming private kitchen in a delightful Basque country house. This bucolic and peaceful land is where Natalia, your cooking instructor, established her home. The area offers spectacular views of the Cantabrian Sea as well as the rural landscape of green hills and the small orchards of Monte Igueldo.

Natalia inherited her passion for cooking from her mother, and after years of cooking for friends and relatives, she entered professional training at Le Cordon Blue in Paris, where she was granted Le Grand Diplôme. She has worked in Spain for well-known cooking schools in Madrid, Bilbao, and Valencia, and in France, she is a regular instructor at the elegant cooking school of the Montesquieu family in Armagnac. She has compiled a recipe book with the culinary secrets of the Clarisas nuns, and is currently preparing a second publication with recipes of her own.

Her passion for fusion and new techniques led her to become very familiar with today’s influential Basque chefs, and for the last twenty years, Natalia has been devoted to her vocation of transmitting her culinary knowledge in a simple, pleasant and professional way. For you, she will organize a personal selection of dishes from the star chefs of modern Basque cuisine, to be prepared in the comfort of her own kitchen. The recipes are adapted so they can easily be prepared when you get back home… think of the impression you’ll cause on friends and family!

Private Traditional Cooking Classes in Vejer (Cadiz)

If you’re traveling to Andalusia, this private day cooking experience is the perfect excuse to discover the beautiful area of Vejer de la Frontera and the coast of Cádiz, just over 1 hour drive South of Seville.

Your host will be Carlos, our local English-speaking cooking instructor, who started cooking at his family restaurant in Conil de la Frontera, and has worked as a cook in Seville and The Netherlands, where he met his Ducht wife. Both live now in a charming finca outside of Vejer, surrounded by orange and fig trees, grenades… This is where your cooking class will take place.

You will start the day visiting with Carlos the popular food market of Barbarte, a fishing town devoted to catching red tuna maintaining the sustainable and ancient Almadraba technique. You will be amazed with the unique atmosphere and the variety of foods, fish in particular, the freshest you can find!

On arrival to the family’s finca feel at home, pour yourself a glass of wine and get ready to use seasonal ingredients brought from the market to prepare with Carlos a delicious local menu, including recipes such as atún encebollao (tuna cooked with onions and wine), cazón en adobo (deep fried marinated fish), papas aliñás (potato salad), gazpacho or ajo caliente (gazpacho’s warm version), local tapas… Relax and enjoy cooking and chatting with your local host in this beautiful setting, feel welcome to participate, ask, suggest… and take a bite of this or that while cooking.
